Slow cookin’ vegetarian succotash. Mmmm! This one got two thumbs up from both me and my hubby! It’s vegan-friendly, though what you see pictured is the vegetarian version, which has cream in it (I had half a carton of whipping cream in the fridge leftover from the holidays, and hate to waste food). I also used great northern beans instead of lima beans because my hubby can’t stand limas.
The recipe is from the book 125 Best Vegetarian Slow Cooker Recipes, a Christmas gift from my mom. I’ve been using this cookbook a lot lately, and I’ve got two more of its recipes planned before the week is through. I looooooove my crockpot. It’s been my savior now that I’ve got a longer commute and less time to cook on weeknights.
As much as I love cooking with a crockpot, I’ll never be able to top the tremendous accomplishment of Stephanie over at A Year of Crockpotting. She’s a crockpot whiz, having cooked a new slow cooker recipe everyday for an entire year! How awesome is that? I can’t wait to dig through her site and browse all the recipes she tried. Well done, Stephanie!

A sad note…. my crockpot died last night.
Was prepping what was supposed to be our dinner for tonight and I noticed a nice big crack down the side of the clay pot… after further investigation, it looks like it happened after baking the succotash. It was too late to run out for a new one last night, but I think hubby and I have that on our to-do list for tonight. I don’t think I could survive without my crockpot…. oh alright, I’d survive but I’d certainly be more bitchy! LOLOL
