Just a quick post to show you what we’ve been eating over the past week or so! I either ran out of time to blog about these dishes, or there wasn’t an interesting, blog-worthy story to go along with them. Yet, I still wanted to share them with you!
Above, is smokey grilled tempeh (from Veganomicon) with a side of maple-glazed potatoes (from Vegan with a Vengeance). Though you can’t tell from the photo, my cooking blunder here was that the potatoes were not cooked enough. I have since discovered that my hubby’s oven is off by about 25 degrees.

Above is spaghetti with meatballs. Very simple. A mix of regular and whole wheat pasta, topped with Whole Foods Market brand sauce and the company’s “Whole Kitchen” brand of vegan meatballs. My hubby likes this dish.

Above is the Whole Kitchen brand Vegetarian Spring Rolls, topped with the Peanut Sauce in Vegan with a Vengeance, served over basmati rice. The peanut sauce was really good, and so were the spring rolls. It made for a fast, easy dinner.

Above, honey fried tofu served over a salad. I first blogged about honey fried tofu back in 2007. Since then, I’ve also tried it with maple syrup. I’ve yet to try it with agave nectar, but I think that could be just as delicious!

Above is Cashew Ginger Tofu. I first made this dish back in December while hubby was out of town for work. I knew he’d love it, so I made it again last night so he could try it. I was right, he loved the cashew ginger sauce! This time, I served it with a small side salad and veggies steamed in my rice cooker! Who knew you could steam veggies in a rice cooker? I didn’t until I read it recently on a blog… and now I can’t remember which blog it was, I follow so many.

Above is Mac and Cheese Florentine from the book Fresh from the Vegetarian Slow Cooker. I really liked this, but it came out a bit dry… Next time I think I might try doubling the sauce, which was dairy-free, made with white beans and cashews. It was an easy comfort food dish, and I loved having the spinach in there!

That mac and cheese looks fabulous!! I didn’t give you the tip about steaming veggies in the rice cooker, but….I gave my aunt that same advice last week, haha.
Your blog makes me miss my slow cooker so much. I can’t to be reunited with it.
