A quick post to show you this delicious crockpot dish I made for us the other night… the recipe is from Judith Finlayson’s book, 125 Best Vegetarian Slow Cooker Recipes. If you haven’t visited Judith’s Web site yet, it’s worth a browse… each week she features a dish from her books as the “Recipe of the Week.” Currently, it’s the “Rice Pudding with Cherries and Almonds” from 125 Best Vegetarian Slow Cooker Recipes.
Hubby and I both liked this recipe but I joked to him that it looked like he was eating a totally different soup; he had taken a handful of saltine crackers, crushed them and added it to his soup, which absorbed all the moisture and turned his “soup” to a glob! LOL Nonetheless, in my opinion, this soup tasted just as good as leftovers in the days following. In fact, today I used the soup as the sauce for the pasta I brought for lunch, and it was a yummy alternative to traditional pasta sauces!








Mmmm what a good idea for pasta sauce! I usually just rely on the web for recipies, or modifying my Grandma’s meat ones, but everything you post sounds so yummy, that I decided to order some of the books you mention in here. I’ve never cooked with a slowcooker, but I did get one and am waiting for the book to try out some tasty recipies.
Oh I think you will love the slow cooker, Alexis! There’s obviously prep involved, but having that appliance do all the actual cooking is great… I love coming home from work and having a hot meal waiting for us to consume! Please let me know how you like it!

Hey, my husband likes to glob up his soup too. Usually though he has peanut butter on his crackers when he does.
Hmm, I have to go find the recipe. We’re omnivores too, but we eat a little vegetarian. Thanks for the suggestion.
