“You had me at potato!”
That’s become my husband’s catchphrase any time I’m rambling off ingredients in a new recipe I’d like to try.
My hubby loves potatoes. So I had a feeling this casserole would be a hit. I got even more excited when, in between Rockband 2 songs, hubby looked over at me and said “Dinner smells really good honey!”
We both really enjoyed this recipe, which you can grab by visiting Susan’s fabulous site, FatFree Vegan Kitchen. Her photos are much, much nicer than mine… but we couldn’t get this out of the pan in such a nice square like she did. It was still yummy though! I enjoyed having the tempeh mixed into the casserole. And the thing I love about casseroles is that there are leftovers to get us through the rest of the week, which means a break in cooking for me!
I bet this dish will taste even better reheated.
Hubby has an uber secret dinner planned for me this Saturday for Valentine’s Day… I love surprises! I can’t wait to see what he comes up with!!

I’m a big fan of tempeh but have a hard time getting my son and husband to eat it. This “cheesy” (I know it’s not real cheese) casserole might do the trick. Gotta try it soon!
