I had every intention of using the last package of tempeh in my fridge to make the tempeh breadsticks I spied over at Vegan Slaughterhouse the other day. But as I was describing the breadsticks to my hubby–slicing the tempeh in strips and wrapping them in dough–he said that sliced tempeh made him think of fajitas. So fajitas it was!
I sliced the tempeh into 16 strips and cooked it in boiling water for about 10 minutes.
Meanwhile I got some peppers and onion going in the wok. Hubby won’t eat bell peppers unless they are extremely soft, so I knew it was going to take awhile to cook the peppers.
Once the tempeh was done, I cut the 16 slices in half, making 32 strips of tempeh, and fried it with some oil till golden brown.
Then, I added some taco seasoning and water to the pan with the tempeh and cooked it up!
We wrapped the tempeh strips and peppers mixture in flour tortillas, along with some Tofutti sour cream and cheese, with chips and salsa on the side…. and voila! Tempeh fajitas!
The only thing missing was the margaritas! LOL
Hubby really liked these… he ate three!

Mmm! Tempeh with taco seasoning might just cure that taco craving I’ve been having! It’s amazing that my high school cafeteria served tempeh, but my college one doesn’t. But I guess that’s the best they can do considering the current economic straits. Looks great – thanks for the ideas!
