One of the best strategies for surviving an omnivorous social gathering like a picnic, potluck or party is to bring a delicious vegetarian dish to pass!
Sharing a favorite veg meal not only ensures that you will have something meatless to eat at the party, but it also introduces vegetarian cuisine to meat eaters in a non-threatening way. As long as it tastes good, they’ll never miss the meat!
This Asian Salad recipe has appeared at our family gatherings for the past couple of years. Kudos to my sister for finding the recipe. It’s uber yummy and ridiculously easy to assemble. Makes a great side dish for (veggie) hot dogs, (veggie) burgers, sandwiches, you name it. Double the recipe if it’s a big party. This salad was the star dish at my cousin’s graduation party yesterday. Honest, omnivores LOVE this one! And it’s vegan, too, if you use vegan sugar.
ASIAN SALAD
1 package of slaw (shredded raw cabbage)
1 (3oz) container of rice noodles
2 packages of ramen noodles, cooked (ditch the flavoring packet)
1 bunch of green onions chopped
1 cup silvered almonds
Sauce:
1 cup vegetable oil
1 cup sugar
1/2 cup vinegar
2 tbsp Bragg liquid aminos (or soy sauce)
Mix the sauce and the other ingredients in separate bowls. Then combine it all together. See, told ya it was simple!
