I was so anxious to make ice cream for this month’s Cookbook Club selection that I spent most of yesterday afternoon browsing through The Vegan Scoop. I chose a flavor that is one of hubby’s favorites, Carrot Cake.
I forgot just how much I love making homemade ice cream! It’s definitely a lot of fun. And, I love knowing what’s in the food I’m eating. Cooking it at home from scratch helps with that.
The verdict on the vegan Carrot Cake ice cream? Absolute yum! This particular recipe does not taste like a dairy-free dessert. It’s very sweet so would probably be best enjoyed in moderation, but otherwise it’s as delectable as any other “traditional” dessert. When I asked hubby what he thought, his answer was “very good,” which is a success in my book!
I’m itching to start a second batch of ice cream… I have a feeling I’ll have no problem fulfilling the four recipes this time!
